Abstract: This dish is an excellent appetizer for entertaining large groups of guests. Create an italian country feast by serving the dish on a wooden cutting board surrounded by baskets of italian country bread. This recipe is featured in Cooking with Nunzio's Spring 2009 Cooking Series featuring the Abruzzo Region.

Sausage and Polenta
Recipe by Chef Nunzio Patruno
Serves 10
Ingredients:
5 lbs. of sausage
1 large onion, sliced
2 celery stalks, chopped
2 garlic cloves, chopped
2 bay leaves
1 glass of white wine
2 cups of tomato sauce
1/2 cup of chicken stock
Polenta:
2 quarts of boiling water
1 cup of polenta
2 ounces of extra virgin olive oil
4 ounces of pecorino cheese
salt & pepper
Instructions:
In a large saute pan cook the onions, garlic and celery until golden. Add the sausage and cook down for 2 minutes. Add the white wine & bay leaves and cook for another 5 minutes. Then, add the tomato sauce and chicken stock. Cook for about 30 minutes on low heat. Set aside.
In a large pot bring the water to boil. Add the polenta stirring slowly with a wooden spoon. Then, add the olive oil, salt, pepper and pecorino cheese. Cook down for 20 minutes.
To serve, pour the polenta onto a wodden cutting board and spread evenly with a spatula. Pour the sausage with the sauce all over the polenta. Sprinkle the rest of the pecorino cheese and some chopped parsley over the polenta and serve.
