Abstract: Chef Nunzio recently featured this great summer recipe at the Collingswood Farmers' Market Cooking Demo on July 17th. The dish is very easy to make and is full of the vegetables' natural flavors. Therefore, perfect for low to no salt diets. Also, you can serve it warm or cold over grilled country bread, pasta and salads. Enjoy! Please post your comments.

Cooking Demo at the Collingswood Farmers’ Market

Farmers’ Seasonal Ratatouille
Recipe by Chef Nunzio Patruno
Serves 8
Ingredients:
1 small onion
1 garlic clove
5 Basil leaves
Pinch of parsley
Pinch fresh thyme
2 plum tomatoes
2 medium zucchini
2 yellow squash
1 medium eggplant
1 red, 1 yellow & 1 green pepper
2 oz. olive oil
½ c vegetable stock
1 oz. graded pecorino cheese
8 slices of grilled country bread
Instructions:
Cut all the vegetables in ½ inch squares and set aside. Sauté the garlic & onions in a deep braiser; then add all the pre-cut vegetables including the tomatoes and herbs. Add salt & pepper. Cook down for five to eight minutes while stirring with a wooden spoon. Add the vegetable stock and cover. Cook for ten minutes. Serve in a large platter and surround the ratatouille with the grilled country bread. Dust with Pecorino cheese and a chiffonade of basil.
