Calamari con Piselli
Recipe by Chef Nunzio Patruno
Serves 6
Ingredients:
2 pounds of fresh, clean calamari, tube & tentacles
1 pound of fresh peas
5 plum tomatoes, peeled, seeded & chopped
1 small onion, chopped
2 garlic cloves, chopped
2 bay leaves
1 tablespoon of parsley, chopped
Pinch of hot pepper
2 ounces of white wine
1 teaspoon of flour
1 ounce of extra virgin olive oil
Salt & pepper
Instructions:
In a sauté pan add the oil, garlic and onions cooking until golden. Add the calamari and cook down for 5 minutes. Add the flour, peas, bay leaves and white wine. Let the wine evaporate for 2 minutes and add the tomato and hot pepper. Cook down for another 15 minutes. Add salt & pepper and sprinkle with fresh chopped parsley. Serve with toasted garlic bread.
