Branzino Fillet all'Acqua Pazza

Recipe by Chef Nunzio Patruno

Serves 6

Ingredients:

6 Branzino fillets, 6 ounces each
1 pint of cherry tomatoes, sliced in half
1 garlic cloves, chopped
2 scallions, chopped
1 oince of white wine
1 tabllespoon of capers
6 basil leaves
pinch of oregano
1 tablespoon of parsley, chopped
1 cup of water
salt & pepper

Instructions:

In a saute pan, add olive oil, garlic and scallions.  Cook until golden then add the cherry tomatoes and white wine.  Cook for one minute. Add all the rest of the ingredients and 1 cup of water.  Bring the water to a boil and add the Branzino fillets.  Cove r the pan with a lid and cook for 3 minutes at high heat.

Serve the Branzino in a soup bowl with its' own broth and condiments.  Drizzle with extra virgin olive oil, fresh parsley and freshly squeezed lemon juice.
