Herb Crusted Salmon Braised with Fresh Asparagus
Recipe by Chef Nunzio Patruno
Serves 6
Ingredients:
6 Salmon Steaks, 6 ounces each
2 bunches of asparagus
2 garluic cloves, chopped
1 teaspoon parsley, chopped
1 sprig of thyme
4 basil leaves
2 ounces of extra virgin olive oil
1 teaspoon of breadcrumbs
1 teaspoon of pecorino cheese
salt & pepper
Instructions:
On a cutting board, mix together the parsley, thyme, basil and garlic and chop them as fine as possible with a sharp chef's knife. Place the chopped herbs in a glass bowl and add the pecorino cheese, breadcrumb, one teaspoon of extra virgin olive oil, salt & pepper. Mix all together creating a paste. Spread the paste over the salmon steak and srt aside.
Saute the salmon steaks in extra virgin olive oil on both sides for two minutes on each side. Set aside. Remove the pan from the stove and line up the asparagus creating a raft for the salmon for the salmon to sit on top. Put the pan back on the stove and add the shallots and the balsamic vinegar. Cover with a lid and cook for five minutes at high heat.
Ro serve, place the asparagus on the bottom of the plate and salmon on top. Drizzle over the salmon the vinegar reduction and extra virgin olive oil. Finish with a sprinkle of fresh parsley.
