Fresh Cod with Potatoes, Onions and Cherry Tomatoes

Serves 6
Ingredients:
6 Cod steaks, 6 ounces each, lightly dust with flour
1 medium onion, peeled and thinly sliced
3 medium potatoes, peeled and thinly sliced
1 pint of cherry tomatoes, cut into halves
1 teaspoon of chopped parsley
1 sprig of thyme
2 bay leaves
12 black olives, pitted
2 ounces of white wine
1 ounce of extra virgin olive oil
salt & pepper
Instructions:
Parboil the potatoes in advance for about five minutes and set aside. In a saute pan, add the extra virgin olive oil and saute the cod fish on both sides for two minutes on each side. Add the onions, garlic and white wine. Let the wine evaporate for one minute. Add the potatoes, cherry tomatoes, black olives, parsley ans thyme. Add salt and pepper for taste. Cover the pan with a lid and let cook for ten minutes on medium heat. Remove the saute pan from the stove.
To serve, place the potatoes on the bottom of the plate and place the cod on top. Drizzle the cod with the pan's broth, extra virgin olive oil and freshly chopped parsley .
