Jersey Tomato Caprese Style Mozzarella

Serves 6
 
Ingredients:                                                   
 
6 medium jersey tomatoes, ripe
6 slices of parma prosciutto
6 small buffalo mozzarella
1 bunch of arugula
salt & pepper
2 ounces of extra virgin olive oil
6 basil leaves
 
Instructions:
 
Slice each tomato into 3 sections. Cut the mozzarella into three slices. Then, season the tomato with sea salt, black pepper and extra virgin olive oil.
 
Stack the tomato, mozzarella and basil leaf re-creating the tomato. Wrap around the tomato with one slice of prosciutto. Next, in a mixing bowl, season the arugula with balsamic vinegar, extra virgin olive oil, salt & pepper. 
 
To plate, place the stacked tomato in the middle of the plate and surround it with the seasoned arugula salad. Drizzle with aged balsamic vinegar and extra virgin olive oil and Serve.
